Olive oil and maple syrup do not usually feature in caramel, but this viral sensation is much quicker than a traditionally made caramel which features butter, cream and sugar, and which requires the cook to stand over a pan at the stove for quite a while.

Directions
For the olive oil caramel: Add the olive oil and butter to a bowl, then whisk together. Whisking constantly, slowly drizzle in the cold maple syrup. Whip vigorously until emulsified, 2 to 3 minutes. Add the salt, then mix in and set aside.
For the sundae: Scoop the ice cream into sundae dishes, then top with generous amounts of olive oil caramel; dust with the pistachios. Garnish each sundae with a cherry.
