Pork Belly Crouton Salad

If you are a fan of salad, how about swapping toasted bread croutons for ones made from pork belly? The crispy, flavorful, meaty little bites are the ultimate garnish to take your salads to the next level.

Directions

  1. For the croutons: Preheat the oven to 275 degrees F.
  2. Heat a large skillet over medium heat. Add the pork and sear all over, 2 minutes per side. Remove to a bowl, then season with the brown sugar, rosemary, salt, smoked paprika, pepper, red pepper flakes, garlic powder and onion powder. Toss to coat. Transfer to a foil-lined baking tray. Bake until very tender, about 1 hour. Remove from the oven and set aside.
  3. For the dressing: Add the lemon juice, olive oil, vinegar, honey, chives, salt and pepper to a mason jar and secure the lid. Shake until combined. Taste and adjust the seasoning as needed.
  4. For the salad: Add the butter lettuce to a bowl and spoon over a few tablespoons of the dressing, then toss lightly. Place on a platter. Top with the apple, cucumbers, piquanté peppers and walnuts. Scatter around the pork belly croutons and serve with the remaining dressing on the side.
