This edible slime has a soft, stretchy, mochi-like texture rather than the endless elasticity of non-edible glue-and-borax slime.

Ingredients

Directions

  1. In a wide saucepan, thoroughly whisk together the tapioca starch and xanthan gum. (Distributing the xanthan evenly prevents stubborn lumps.) In a separate cup, combine the cold soda, glycerin and optional food coloring. Gradually whisk the liquid into the starch mixture until completely smooth.
  2. Cook over low heat, whisking constantly as the mixture begins to thicken. Once translucent sections begin forming, switch to a silicone spatula. Press the mixture against the bottom of the pan and continuously fold it over itself. Remove it from the heat as soon as it becomes completely translucent, glossy and cohesive. Avoid overcooking, which makes the slime rubbery. Transfer the slime to a heatproof bowl, cover and allow it to cool completely.
  3. Knead the slime for several minutes with slightly damp hands. Fold in the optional edible inclusions after cooling. Stretch it slowly for the longest pulls; tapioca slime may snap when jerked quickly. See Cook's Note below for troubleshooting any issues with your slime.
  4. Store the slime covered in the refrigerator. It will keep for up to 7 days if it remains untouched and is handled only with clean utensils. Once it has been played with, enjoy a taste during the activity and discard it afterward.

Cook’s Note

If the slime is too sticky: Cook for another 30 seconds, then cool again. If the slime is too firm or prone to tearing: Knead in additional soda, 1 teaspoon at a time. If the slime has white lumps: Return it to very low heat with 1 tablespoon of soda. Press each lump flat with a spatula until it becomes translucent.
