Leave it up to the internet to make a classic recipe actually new and cool. This time around it's the simple frico chip, which is simply a crisp round of melted and caramelized cheese. I like them broken up over a salad or even in a burger as a crunchy cheese element. You can make them on the stovetop or bake them, and that's where this classic remake, started by social media, begins. Just adding one ingredient to the ride in the oven made it new again: the onion. One influencer featured it, and the next thing you know, everyone was putting their twist on this easy frico update, including me. I decided to add a few more things, and it turned into, sometimes, the best part of the pizza for me, the top!

For the crisps: Preheat the oven to 400 degrees F.
Mix the cheeses together on the surface you grated them on, or in a bowl if you’re fancy. On a baking sheet lined with nonstick aluminum foil or parchment paper, spread the cheese in a thin layer in the shape of a rectangle. Place the onion rings and pepperoni rounds in a 4-by-4 grid, alternating as you go (so, onion slice, then pepperoni, then onion, then pepperoni and on to the next row) and making sure they don’t touch. Brush the tops with olive oil and sprinkle the Italian seasoning over the top.
Bake until the edges are golden and on the edge of burned, 18 to 22 minutes. (Start watching around 15 minutes.)
Remove and allow to cool for 10 to 20 minutes.
To serve: Make into individual servings by either breaking or slicing the 16 squares, using the onion slices as guides. Add the arrabbiata to a dipping bowl and top with the basil; do the same for the ranch with the parsley. Serve the crisps with the dips.
