Sunny's Tiramisu French Toast Bites

I'm a parsimonious cook and love any way to save money in my kitchen. If there are leftovers or odds and ends, the best remedy is a great pantry that is stocked and ready to turn anything into something special. This is an elevated version of a new treat that is really an old one, making French toast out of leftover buns.

  1. For the custard: In a shallow bowl, whisk together the eggs and sugar until the sugar dissolves. Whisk in the chocolate milk, espresso powder, vanilla and salt.
  2. For the cream: In a large bowl, whisk the heavy cream until there are soft peaks when you lift the whisk. Add the sugar and whisk a bit more, then whisk in the mascarpone until it is smooth. Remove to a piping bag or plastic bag; you can also simply choose to dollop. Cook's choice. Refrigerate until ready to serve.
  3. For the toast: In a large nonstick pan on medium heat, add 2 to 3 tablespoons butter. Let melt, then quickly dunk each piece of bun in the custard. Do not over-sog, but also make sure they are coated and lightly saturated. Place them in the pan with space between pieces; you may have to do this in batches, or use a griddle pan. Cook on one side until golden, then flip, adding butter along the way. If cooking in batches, keep the cooked portions warm in a 200 degree F oven on a wire rack in a baking sheet.
  4. Top each serving with the cream, then use a mini sieve to top with a dusting of cocoa powder. Add some raspberries and a drizzle of syrup, if wanted.
