These sweet fritters are inspired by the traditional Qatari dessert recipe for khanfaroosh. They’re a classically fried or baked fritter that is infused with rose water, saffron and cardamom. Soft and tender like a doughnut with layers of delicious flavor, it’s an easy treat to make at home. Be sure to drizzle them with date syrup for the finishing touch.

Ingredients

Directions

Special equipment:
a deep-fry thermometer
  1. In a small bowl, add the rose water and saffron and allow to bloom for 10 minutes. Set aside.
  2. In a medium bowl, add the flour, rice flour, cardamom, baking powder and salt. Whisk to combine and set aside.
  3. In a large bowl, add the sugar and eggs and whisk to combine. Add the vanilla and saffron-rose water, and whisk again.
  4. Add the dry ingredients to the wet ingredients with another 1/4 cup water and whisk gently one last time. Allow the batter to rest for 30 minutes.
  5. In a high-sided saute pan, add the oil until it comes up 1/2-inch in a Dutch oven and heat over medium-high heat until it reaches 360 degrees F on a fry thermometer. Drop heaping spoonfuls (about 2 tablespoons) of the mixture, frying 5 or 6 per batch. Allow to fry for 30 seconds, then sprinkle with some sesame seeds. Continue frying until golden brown, then flip and fry the second side until golden, another 2 minutes or so.
  6. Remove to the wire rack and continue with the remaining batter. Serve with a drizzle of date syrup and enjoy.
