a pizza stone or steel
For the dough: Mix the flour, salt, yeast and 16 ounces cold water in a mixer fitted with the dough hook until it comes together and gets smooth, or hand mix. Place in a covered bowl and let sit at room temperature for 30 minutes. Transfer to the refrigerator and let sit 48 hours, punching down if needed.
Pull the dough out and portion into individual balls, approximately 9 ounces each. Place on a floured tray, then cover with plastic wrap and refrigerate another 24 hours. It is now ready to use.
For the chicken: Meanwhile, place the chicken in a bowl, then sprinkle with salt and cover with water. Put in the refrigerator for 24 hours.
Preheat the oven to 425 degrees F.
Drain the chicken, then place on a baking sheet and bake until cooked through, about 45 minutes. Chill, then slice thinly.
For the sauce: Mix together the chile sauce, lime juice and soy sauce.
Preheat the oven with a stone or steel to 550 degrees F.
Stretch or roll out each pizza round to about 12 inches. Top each with 1/4 cup sauce, about half a chicken breast and some green onions, then cover with 4 ounces mozzarella.
Bake until brown on the bottom and bubbly on top, about 9 minutes. Repeat with the remaining ingredients to make 3 more pizzas.
