Directions
For the pasta: Bring a large pot of salted water to a boil. Cook the macaroni until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
For the sauce: In a large saucepan, melt the ghee over medium heat. Add the flour and whisk continuously to form a roux. Cook until slightly golden, 1 to 2 minutes. Gradually whisk in the milk and cream, ensuring there are no lumps. Stir in the softened cream cheese until smooth. Add the sour cream and season with the dry butter tikka masala seasoning, garlic powder, salt, white pepper and lemon juice, if using. Reduce the heat to low and add the Cheddar, mozzarella and Gruyere or smoked Gouda, if using. Stir until the cheese has fully melted and the sauce is creamy. If the sauce is too thick, add a splash of pasta water or warm milk to achieve the desired consistency.
Add the cooked pasta to the sauce and mix well to ensure that the pasta is fully coated. If using optional add-ins like chicken tikka or roasted cauliflower, fold them in now.
For the optional crust: Preheat the oven to 375 degrees F (190 degrees C).
In a small bowl, combine the crushed hot cheese puffs, Parmesan and kofta seasoning. Add the cayenne for extra heat, if desired.
Transfer the mac and cheese to a greased baking dish. Sprinkle the prepared crust evenly over the top. Bake until the crust is golden and crispy, 10 to 12 minutes. Avoid overbaking to keep the sauce creamy.
Garnish with fresh mint for a refreshing contrast. Serve hot.
