Pancakes are a breakfast staple. Classic, short stack, super fluffy, we love them all. But the one pancake we can't get enough of isn't stackable, and, in fact, it doesn't look like a pancake at all. It's an ebelskiver (or stuffed pancake). Chances are you've seen these creations at a recent brunch. Maybe you wondered how your clever host got the filling in those small pancake rounds, anyway. Well, we're here to tell you their secret: an ebelskiver pan (probably from Williams Sonoma).

The Nordic Ware Ebelskiver Pan is a favorite among breakfast lovers, and we can't say we're surprised. While we love a classic buttermilk pancake with maple syrup, there's something so special about biting into a pancake round to discover a delicious filling of chocolate, fruit or jam. Stuffed pancakes also make the perfect party treats. Whip up a few batches with a variety of batters and fillings for delightful finger food that's ideal for a brunch with friends or even as an afternoon snack.

Though they look impressive, stuffed pancakes are actually quite simple to make. Simply mix the pancake batter of your choice in a large bowl, mix your fillings in a separate bowl and then get cooking. Preheat your pan over the stove and brush it with butter. Then, pour your batter into the pan and place your filling in the center. When the edges start to bubble, use a wooden skewer to gently turn the pancakes to cook on the other side. Then pop them out of the pan and into a bowl to serve.

While we're sure your host would love to take credit for this treat, the idea for these stuffed pancakes is actually Danish and dates back centuries. Ebelskivers are commonly served warm with coffee in the afternoon or sold on the street as a warm snack during the winter. They're seen as a sign of hospitality and are usually shared among friends, which makes them perfect for a holiday get-together.
