Dry Aged Rib-Eye with Gruyère and Rosemary Yorkshire Puddings and Sautéed Sugar Snap Peas

A classic Sunday steak dinner! Yorkshire pudding was always a big hit in my house growing up! The rub for the rib-eye is flavorful with sweet, savory and earthy notes that works on lots of cuts of beef. The method for cooking the sugar snap peas works on all kinds of green veggies! The whole dins is just classic!

Special equipment:
6-cup muffin tin
Preheat the oven to 350 degrees F.
Add to the rib-eye a generous seasoning of salt.
For the rub: Add to a small sauté pan the black peppercorns and toast over medium heat until fragrant, about 2 minutes. Remove and grind in a spice grinder. Mix in a bowl with the granulated garlic, mushroom powder, 1 tablespoon salt, the brown sugar and cayenne. Rub the meat on all sides with the rub. Toss the diced carrot, celery and onion with a drizzle of olive oil and a pinch of salt in the center of a sheet pan. Spread out evenly and top with a wire rack. Place the meat on the rack over the mirepoix and roast until 115 degrees F, about 30 minutes. Remove and reserve the drippings and roasted carrots, celery and onions.
For the Yorkshire pudding: Change the oven temp to 450 degrees F and place a muffin tin in the oven to preheat.
Blend the flour, milk, butter, salt, Gruyère, egg and rosemary in a blender. Blend in 1/2 cup of the reserved rendered beef fat. Divide the remaining drippings into the bottom of each cup of the muffin tin and fill each cup 2/3 full with the batter. Top with Gruyère. Bake for 10 minutes, then lower the oven to 350 degrees F until puffed and golden, 5 to 10 minutes more.
For the sugar snap peas: Add to a skillet a coating of olive oil and the bacon and render over medium heat until crispy, about 10 minutes. Blanch and shock the peas in salted water for 2 1/2 minutes and sauté quickly in the bacon fat. Add a chiffonade of mint to finish.
For the red wine gravy: Sauté the mushroom stems with the garlic and olive oil over medium heat in a saucepan until the garlic is translucent, about 5 minutes. Add the demi-glace, water, reserved roasted carrots, celery and onions and let cook down for 10 minutes.
In batches, add to a small skillet the sliced mushroom caps, a drizzle of olive oil and some salt and brown in one layer over medium heat, about 5 minutes. Then remove to a bowl.
Add to the skillet the red wine and reduce by half, about minutes. Strain the mushroom stem liquid into the wine ladle by ladle, about 3 ladles total. Add the browned mushrooms caps to the sauce.
Get a cast-iron skillet hot with some more olive oil over high heat and reverse sear your steak, searing all the edges. Slice your steak and serve with the mushroom gravy, sugar snap peas and Yorkshire puddings on the side.
