4 slices crusty Italian bread

1/4 cup plus 1 tablespoon extra-virgin olive oil

2 ripe avocados 

3 tablespoons minced fresh chives 

3 tablespoons minced fresh parsley 

2 teaspoons lemon juice 

Kosher salt and freshly ground black pepper

1 large tomato, coarsely chopped 

4 slices cooked bacon, chopped 

Flaky sea salt 


  1. Preheat the oven to 400 degrees F.
  2. Drizzle the bread slices with 1/4 cup of the olive oil. Place the bread on a baking sheet and bake until golden brown, 12 to 15 minutes.
  3. Mash the avocados in a small bowl. Add 2 tablespoons each of the chives and parsley, the lemon juice, 1/2 teaspoon kosher salt and 1/2 teaspoon pepper; mix until fully combined.
  4. Toss the tomatoes, the remaining 1 tablespoon each olive oil, chives and parsley, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a small bowl.
  5. Spread each slice of bread with 1/2 cup of the avocado mixture and 1/8 cup of the tomato mixture. Sprinkle with the chopped bacon and flaky sea salt.
