an offset barbecue pit or smoker
Combine the chili powder, garlic powder, salt, dry mustard, pepper and smoked paprika in a bowl and mix thoroughly.
Prepare and light a fire in an offset barbecue pit or smoker. Maintain a temperature of 275 degrees F.
Thoroughly coat all sides of the beef rib rack with the spice rub. Place the rib rack on the center grate of the barbecue pit and cook until the ribs register 195 to 200 degrees F, approximately 8 to 10 hours.
