Conch Flyer Fritters

Ingredients

1 pound ground conch

1/3 cup chopped or minced garlic

1/2 cup chopped onions

1/2 cup diced suntan peppers

1 tablespoon fresh basil

1 tablespoon fresh oregano

1 teaspoon black pepper

Pinch cayenne pepper

1/2 cup clam juice

3 eggs

3 to 5 cups self-rising flour

Directions

  1. Combine all ingredients except for flour in a large bowl. Mix well. Slowly add flour, mixing to combine well to a thick, heavy batter. Drop ping-pong ball size fritters into hot shortening (350 degrees). Cook for approximately 2 to 3 minutes, until golden brown. Stick fritter with toothpick to be sure middle is done. Serve on a bed of lettuce with cocktail sauce, key lime sauce, honey mustard or lemon wedges.
