1 tablespoon olive oil

1/2 red bell pepper, chopped

1 large bag of frozen corn

1/4 cup water

2 tablespoons fresh chopped parsley

2 tablespoons butter

Salt and pepper


  1. In a large saucepan, heat oil and cook red pepper for 2 minutes. Stir in corn and water and bring to a boil. Cover and reduce heat to low. Cook for 4 minutes, stirring occasionally. Drain off any remaining water. Stir in parsley and butter and toss to mix. Season and serve hot;
