Crunchy SuperFood Breakfast Parfait

1 cup coconut or almond milk

3 tablespoons chia seeds

1 tablespoon agave nectar

1/2 tablespoon cracked flax

1/2 tablespoon cracked hemp seeds

1 teaspoon pure vanilla extract

Blueberries, pomegranate seeds or other fresh fruit or berries

Granola, raw oats, nuts or honey, for garnish


  1. Combine the coconut milk, chia seeds, agave nectar, flaxseeds, hemp seeds and vanilla in a medium bowl, and let sit for 10 minutes, whisking every couple of minutes. The mixture will start to set like gelatin. Place some fruit in a parfait glass, add the milk mixture and let sit in the refrigerator overnight. Top with granola, raw oats, nuts or honey.
