Bacon Avocado Toasts

2 ripe avocados, halved, pitted and peeled

3 scallions, chopped

1 tablespoon lemon juice

Fine salt and freshly ground black pepper

4 slices smoked bacon

4 slices sourdough or crusty white bread, sliced 3/4-inch thick


  1. Preheat the oven broiler. 
  2. Mash the avocados in a medium bowl until slightly chunky. Stir in the scallions, lemon juice, 1/2 teaspoon salt and a few grinds of pepper and set aside. 
  3. Arrange the bacon in a large nonstick skillet over medium heat and cook until brown and crisp, about 4 minutes per side. Transfer to a paper towel-lined plate and reserve the drippings in the skillet. Brush each slice of bread with some bacon drippings. Arrange the bread on a baking sheet, bacon dripping side-up, and broil until lightly toasted. 
  4. Spread each toast with 1/4 of the mashed avocado, break each piece of bacon in half and top each toast with 2 halves.
