BBQ Bacon Burgers with Spicy Slaw

To give these burgers a sweet and smoky flavor, ground beef is mixed with a barbecue seasoning blend before cooking, then topped with white American cheese and thick-cut bacon. Serve on Texas toast and top with white onion, pickles and barbecue sauce for a finishing touch. A quick sweet-and-spicy slaw is the perfect refreshing vegetable side to cut through the richness of the burger.

  1. Whisk together the vinegar, brown sugar, celery salt and 2 tablespoons vegetable oil in a large bowl. Add the coleslaw mix and chile pepper; toss to coat, massaging the dressing into the slaw mix. Refrigerate until ready to serve.
  2. Cook the bacon in a large nonstick skillet over medium heat, turning, until crisp, 5 to 7 minutes. Remove to a paper towel–lined plate and break each piece in half. Wipe out the skillet.
  3. Form the beef into 4 patties, about 4 1/2 inches wide and 3/4 inch thick; season on both sides with the barbecue seasoning blend. Add the remaining 1 tablespoon vegetable oil to the skillet and heat over medium heat until hot. Add the patties and cook until browned, about 3 minutes per side for medium-rare; top each with a slice of cheese during the last minute of cooking.
  4. Top each piece of toast with barbecue sauce, pickles, a burger patty, some onion slices and 2 half-pieces of bacon. Serve with the slaw and more barbecue sauce.
