This sweet version of biscuits and gravy comes from the Ozarks region, where it’s a popular breakfast. Don’t be alarmed by the idea of chocolate gravy—it’s basically just a warm chocolate sauce, and it’s the perfect match for buttery biscuits!

Directions
Make the biscuits: Put the butter in the freezer while you prepare your ingredients. Preheat the oven to 425 degrees F.
Combine the flour, baking powder, sugar and salt in a food processor. Scatter in the cold butter. Pulse just a few times until the mixture looks like coarse meal and the butter is in pea-size pieces. Transfer to a large bowl and stir in the cold milk until the dough just comes together but is not fully incorporated. Turn out the dough onto a lightly floured surface, gather together and pat into a 3/4-inch-thick rectangle (about 5 by 10 inches). Fold in half and pat to a 3/4-inch thickness. Repeat folding and patting 4 more times, finishing with a 3/4-inch-thick rectangle (about 6 by 8 inches). Use a sharp knife to cut the dough into 8 square biscuits. Transfer to an ungreased, unlined baking sheet, brush the tops lightly with milk and sprinkle with sugar. Bake until golden, 13 to 15 minutes.
Meanwhile, make the chocolate gravy: Heat the milk in a medium saucepan over medium-low heat until steaming. Combine the sugar, cocoa powder and flour in a large bowl. Gradually whisk the warm milk into the sugar-cocoa mixture. Whisk until completely smooth, then return the mixture to the saucepan, bring to a simmer and cook, whisking frequently, until smooth and thick, 4 to 5 minutes. Remove from the heat and whisk in the butter a few pieces at a time, then whisk in the vanilla.
Split the biscuits in half and divide among plates or shallow bowls. Pour the chocolate gravy over the biscuits and serve immediately.
