Poaching chicken thighs in coconut milk with lots of aromatic ingredients imparts lots of flavor and keeps the chicken super juicy. For a well-balanced meal, we serve it with fluffy whole-grain quinoa and tender broccolini which add a lovely textural contrast. Fresh herbs and toasted sesame seeds are the perfect finishing touches to this healthy dinner.

Preheat the oven to 425 degrees F.
Toss the broccolini with the olive oil, 1/4 teaspoon salt and several grinds of black pepper in a large bowl until well combined. Transfer to a rimmed baking sheet. Roast until tender and charred in spots, tossing halfway through, 20 to 22 minutes.
Meanwhile, bring 1 1/4 cups of water to a boil in a medium saucepan over medium-high heat. Once boiling, stir in the quinoa, 1/4 teaspoon salt and several grinds of black pepper. Cover and reduce the heat to low. Simmer until the quinoa is fluffy and tender, about 12 minutes. Remove from the heat and let sit covered for 5 minutes. Fluff with a fork and adjust the seasoning with more salt and pepper if desired.
Add the coconut milk, garlic, shallot, red pepper flakes, soy sauce, lime zest and 2 cups of water to a large high-sided skillet. Stir to combine and bring to a simmer over medium-high heat. Season the chicken thighs with 3/4 teaspoon salt and several grinds of black pepper. Once the coconut milk mixture is simmering, add the chicken thighs and cover. Simmer until the chicken is cooked through and registers 165 degrees F on an instant-read thermometer, 12 to 15 minutes, flipping the thighs about halfway through.
To serve, spoon the quinoa into 4 shallow bowls. Divide the broccolini between the bowls, then top each with a poached thigh. Sprinkle evenly with the scallions, cilantro and toasted sesame seeds. Squeeze the lime evenly over each bowl and serve. Pass hot sauce on the side if using.
