These golden, cheesy arepas celebrate the best of summer sweet corn in a simple, satisfying way. Directions
Mix 1 cup precooked white cornmeal, 3/4 cup warm water, 1/2 cup grated sharp cheddar, 1/4 cup corn kernels and 1 teaspoon each vegetable oil and kosher salt in a bowl; knead 2 minutes. Form into 4 balls and press into 4-inch rounds. Cook in a large nonstick skillet coated with vegetable oil over medium heat, 3 to 5 minutes per side. Transfer to a rack set on a baking sheet; bake at 350 degrees F until cooked through, about 10 minutes. Season with salt.
