Directions
Whisk together 3 tablespoons lime juice, 2 tablespoons vegetable oil, 1 1/2 teaspoons sesame oil, 1/2 teaspoon kosher salt, a few grinds of pepper and a big pinch of sugar in a bowl. Add 3 Persian cucumbers (cut into half-moons), 2 cups sugar snap peas (sliced on the bias) and 1 diced avocado; toss. Top with 1/4 cup chopped mint and 2 teaspoons toasted sesame seeds; toss.
