This easy weeknight meal is inspired by Musakhan, a beloved Palestinian dish of sumac-roasted chicken served on flatbread. In this version, chicken thighs are rubbed with a fragrant mix of sumac (a tangy spice made from dried sumac berries), cumin, and cinnamon, then grilled until the skin is crisp and lightly charred. Serve with grilled onions, a bright parsley salad and warm flatbread, plus a generous dollop of hummus (store-bought or homemade) to round things out. If you don’t have a grill basket for the onions, just use a cast iron skillet or pan that can go on the grill.

Directions
Preheat a grill to medium. Combine 4 teaspoons sumac, the cumin and cinnamon in a small bowl. Season the chicken all over with salt and pepper and transfer to a large bowl. Add the spice mixture, 3 tablespoons olive oil, 1 tablespoon lemon juice and the garlic. Rub the seasonings into the chicken until evenly coated. Add the red onion and toss again.
Arrange the chicken thighs skin-side up on the grill and transfer the onion rings to a grill basket. Grill, covered and turning occasionally, until the onion is softened and lightly charred, 15 to 20 minutes, and the chicken is cooked through, 25 to 30 minutes; if needed, during the last 5 minutes of cooking, increase the heat to medium-high to brown and crisp the chicken skin.
Combine the parsley leaves and radishes in a large bowl. Add the remaining 1 tablespoon each olive oil and lemon juice and 1/2 teaspoon sumac; toss to coat and season with salt and pepper. Divide the chicken, grilled onion and parsley salad among plates. Serve with flatbread and hummus.
