High-Protein Apple Peanut Overnight Oats

These delicious overnight oats are inspired by the classic snack of apple slices spread with peanut butter and have 18 grams of protein per serving. Oats, hemp hearts, chia seeds and Greek yogurt create the protein-packed base for the breakfast, and apples and maple syrup bring sweetness and brightness. Just a handful of chopped roasted peanuts pack so much flavor that you’d think peanut butter was laced throughout. Make up servings of this breakfast the night before — it takes just 10 minutes — and you’ll have plenty of reasons to start the day feeling great.

two 8-ounce jars with lids
  1. Mix the oats, peanuts, hemp hearts, chia seeds and 1/4 teaspoon salt in a medium bowl. Add the apple and toss until it is evenly distributed in the mixture. Add the yogurt, oat milk and maple syrup and toss until coated and combined. Divide the oat mixture between two 8-ounce jars. Cover with lids and refrigerate for at least 8 hours and up to 2 days. Uncover, stir and enjoy.
