These delicious overnight oats are inspired by the classic snack of apple slices spread with peanut butter and have 18 grams of protein per serving. Special equipment:
two 8-ounce jars with lids
Mix the oats, peanuts, hemp hearts, chia seeds and 1/4 teaspoon salt in a medium bowl. Add the apple and toss until it is evenly distributed in the mixture. Add the yogurt, oat milk and maple syrup and toss until coated and combined. Divide the oat mixture between two 8-ounce jars. Cover with lids and refrigerate for at least 8 hours and up to 2 days. Uncover, stir and enjoy.
