Directions
Whisk the flour, sugar and yeast in a large bowl, then stir in the salt. Stir in the orange peel, raisins, dried apricots and dried cherries.
Combine the milk, butter, honey and lemon zest in a large saucepan. Cook over medium heat, stirring, until the mixture registers 120 degrees F on an instant-read thermometer. Stir into the flour mixture, then mix in the eggs and vanilla. Cover the bowl with a towel and let the dough rise until doubled in size, about 1 hour.
Butter two 9-by-5-inch loaf pans and line with parchment paper. Divide the dough between the pans; cover and let rise again, 1 hour.
Preheat the oven to 350 degrees F. Bake the loaves until a toothpick inserted into the centers comes out clean, about 55 minutes. Let cool in the pans briefly, then remove to a rack to cool completely.
