Simply combine the pico in the Instant Pot with the beans, aromatics and water. Pressure cook until tender, then serve topped with more pico de gallo and cilantro. The result is a simple, versatile and delicious bean side dish.

Directions

  1. Combine 1 cup dried pinto beans, 1/2 cup pico de gallo, 1 bay leaf, 1 smashed garlic clove and 3/4 teaspoon each kosher salt and ground cumin in an Instant Pot; add 2 cups water. Pressure-cook on high for 40 minutes. Let the pressure release for 5 minutes, then turn the valve to the venting position. Turn off the pot. Season with salt. Serve topped with more pico de gallo and chopped cilantro.
