Simply combine the pico in the Instant Pot with the beans, aromatics and water. Pressure cook until tender, then serve topped with more pico de gallo and cilantro. Directions
Combine 1 cup dried pinto beans, 1/2 cup pico de gallo, 1 bay leaf, 1 smashed garlic clove and 3/4 teaspoon each kosher salt and ground cumin in an Instant Pot; add 2 cups water. Pressure-cook on high for 40 minutes. Let the pressure release for 5 minutes, then turn the valve to the venting position. Turn off the pot. Season with salt. Serve topped with more pico de gallo and chopped cilantro.
