This protein-rich, veggie-packed bean salad is inspired by the viral dense bean salad trend that creator Violet Witchel started on TikTok. The idea is to make a one-bowl main-course salad that tastes great the second you make it but also holds up and gets even tastier in the fridge so you can enjoy it over several days. In this version, the kale and vegetables soften, the three beans and flaked tuna soak up the delicious dressing and even the fresh herbs stay flavorful. Whip it up and stop wondering what’s for lunch or dinner for a couple days.

Directions
Whisk the vinegar and mustard together in a large bowl. Slowly pour in the olive oil while whisking constantly. Whisk in 1/2 teaspoon salt and a few grinds of black pepper. Add the cannellini beans, kidney beans, chickpeas, tuna, fennel, celery, carrot and kale to the bowl. Toss until everything is evenly coated. Sprinkle with parsley, mint and chopped fennel fronds and gently toss. Taste and adjust the seasoning with more salt and pepper if desired. Serve immediately, or cover and refrigerate for up to 3 days. It gets even better as it marinates!
