All the components of a class Manhattan -- the hint of bitter orange and sweet cherry and a kick of rye -- are presented in a fun, jiggly shot.

  1. Combine the sugar, bitters, cherry juice and 2/3 cup regular water in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the sugar is dissolved, about 2 minutes. Add the seltzer water to the syrup mixture, sprinkle the gelatin on top and leave it to bloom for 5 minutes.
  2. Microwave the bloomed gelatin mixture until dissolved, about 30 seconds. Stir in the rye whisky, sweet vermouth and 1 teaspoon of the orange zest. Divide the mixture among twelve 2-ounce glasses and place a cherry in each glass. Refrigerate until set, at least 3 hours.
  3. Before serving, garnish each shot with some of the remaining orange zest.
