Pistachio-Cherry Chocolate Balls

A sweet and savory mix of pistachios and pistachio butter, dried cherries and rolled oats come together in these satisfying and wholesome no-bake treats. A melted chocolate coating and sprinkle of crushed pistachios give these healthy chocolate balls an indulgent “truffle” flair.

  1. Pulse the oats and shelled pistachios in a food processor until the mixture resembles coarse meal. Add the pistachio butter, honey, cinnamon, salt and 2 tablespoons water. Continue to pulse until the mixture comes together in a rough paste. Add more water a tablespoon at a time, until the mixture holds together when squeezed. Fold in the cherries.
  2. Using your hand or a 1-tablespoon scoop, form heaping tablespoon-size balls and place on a plate or tray. Refrigerate for 20 minutes.
  3. Meanwhile, microwave the chocolate in a small microwave-safe bowl in 30-second intervals, stirring between each, until melted, about 1 minute.
  4. Using 2 forks, toss the balls in the melted chocolate to coat. Place back on the plate. Sprinkle with the crushed pistachios while the chocolate is still warm.
