Quick Pickled Baby Cremini

2/3 cup cider vinegar

1 tablespoon sugar

1/2 teaspoon cumin seeds

1 sprig fresh thyme

Kosher salt

1 pound baby cremini mushrooms (or halved larger mushrooms)

1/2 cup thinly sliced red onion


  1. Put the vinegar, sugar, cumin seeds, thyme, 1 tablespoon salt and 2/3 cup water in a medium saucepan. Bring to a simmer, add the mushrooms and cook for 4 minutes. Transfer to a heat-safe bowl and stir in the onion. Let stand for 45 minutes or refrigerate, covered, for up to 5 days.
