Roasted Miso Mushrooms and Carrots

Roasted mushrooms are a versatile side for any dinner, with their umami-rich qualities. We amplified the mushrooms with miso and soy sauce to highlight their meatiness and rich flavors. We used a combination of different mushrooms, but feel free to use any type you can find — just keep the size relatively similar so they cook evenly. Carrots help balance the savory flavors with a touch of sweetness and color. Top with lots of fresh herbs for a bright color and flavor to bring it all together.

  1. Position racks in the upper and lower thirds of the oven and preheat to 425 degrees F. Gently toss the mushrooms, shallots, carrots, olive oil, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl until evenly coated. Divide between 2 rimmed baking sheets and arrange in an even layer. Bake until the mushrooms have browned and the carrots are tender, 35 to 40 minutes.
  2. Meanwhile, mix the butter, miso, garlic, soy sauce, vinegar and 2 tablespoons parsley in a bowl until combined. Toss together the remaining 1 tablespoon parsley and the scallion in a bowl (if making ahead, cover the herbs with a damp paper towel in an airtight container and refrigerate).
  3. Remove both baking sheets from the oven. To serve right away, toss with the miso butter, then transfer to a platter and garnish with the chopped parsley and scallion. To make ahead, let sit at room temperature until completely cooled, about 30 minutes. Dot with the miso butter, then consolidate onto one baking sheet, cover with foil and refrigerate up to 2 days.
  4. To reheat, preheat the oven to 350 degrees F. Bake the vegetables, covered, until hot and steaming, 20 to 30 minutes. Uncover and stir to coat in the miso butter, then taste and adjust the seasoning. Transfer to a platter and garnish with the chopped parsley and scallion.

Cook’s Note

Make-Ahead Plan: Roast the vegetables and make the miso butter 2 days ahead and refrigerate. When ready to serve, reheat in a 350 degrees F oven.
