Directions
Position a rack in the lower third of the oven; preheat to 425 degrees F. Stir together the cranberries, sugar, shallot, vinegar, olive oil, thyme sprigs, bay leaves, coriander, red pepper flakes and 1/2 teaspoon salt in a glass or ceramic 9-by-13-inch baking dish. Roast, stirring occasionally, until bubbling and the cranberries burst, 20 to 22 minutes.
Mash the cranberries slightly with the back of a wooden spoon and let cool to room temperature. Remove and discard the thyme sprigs and bay leaves, then transfer to a serving dish.
