Cabbage on its own is a delicious but often overlooked vegetable. This side dish combines crumbled breakfast sausage (which isn’t just for breakfast!), red onion and vinegar for a little punch to balance out the flavors of the tender cabbage and sausage.
Cook 3 crumbled breakfast sausages and 1 chopped red onion in a large skillet with 2 tablespoons olive oil over medium-high heat, 3 minutes. Add 1/2 head chopped savoy cabbage, 3/4 teaspoon kosher salt and a few grinds of pepper. Cook, stirring, until golden, about 5 minutes. Add 3 tablespoons cider vinegar and cook until absorbed, 1 minute. Top with chopped parsley.
