This weeknight dinner mashes up two favorites: the smashburger and the taco. Ground beef is pressed into a thin layer on small flour tortillas. Press the tortillas meat-side down into piles of thin onion, as you would a smashburger, then cook until browned with crisp edges. Top with cheese, homemade special sauce, lettuce and pickles. We like these with sweet potato waffle fries, but really any fry will do.

Directions
Preheat the oven to 200 degrees F. Make the sauce: Mix together the ketchup, mayonnaise, mustard, chopped pickles, 1/4 teaspoon salt and a few grinds of pepper in a small bowl.
Divide the beef into 8 portions and press each evenly onto a tortilla, all the way to the edges; season with salt and pepper.
Heat a large nonstick skillet over medium-high heat, then brush with vegetable oil. Make four 1/4-cup mounds of sliced onion, about 4 inches wide each, in the skillet and top each with a tortilla, meat-side down. Press firmly to adhere the onions to the meat and cook, undisturbed, until browned underneath and crisp at the edges, 3 to 4 minutes. Flip the tortillas, top with a slice of cheese and reduce the heat to medium. Cook until the tortillas are golden and the cheese melts slightly, about 2 minutes. Remove to a baking sheet and keep warm in the oven. Wipe the skillet clean and repeat with the remaining onions, tortillas and cheese.
Drizzle the tortillas with some of the sauce and top with the lettuce and sliced pickles. Serve with the fries and more sauce.
