These delicious shrimp tacos are the kind of weeknight dinner that feels special without requiring much effort. Perfectly seasoned shrimp get a quick lime-garlic marinade, then cook up tender and juicy in minutes in the air fryer. Tuck them into warm tortillas and top with crisp cabbage, a dollop of creamy homemade guacamole and fresh cilantro. a 6-quart air fryer
For the shrimp: Whisk the lime zest and juice, garlic, fish sauce, oil, sugar and pepper flakes in a large bowl until the sugar dissolves and the mixture is combined. Add the shrimp and toss until evenly coated. Refrigerate for 30 minutes.
Meanwhile, for the guacamole: Mash the avocados in a medium bowl until mostly smooth. Stir in the lime juice, serrano chile, cilantro, 1/2 teaspoon salt and several grinds of black pepper. Taste and adjust the seasoning as needed. Cover with plastic wrap, pressing it directly onto the surface of the guacamole, and refrigerate until ready to serve.
Set a 6-quart air fryer to 400 degrees F. Lay the shrimp in the air fryer basket in a single layer, then air fry until just tender and golden brown at the edges, about 6 minutes.
For serving: Place a dollop of guacamole on a warm tortilla and spread out slightly with the back of your spoon, then top with some sliced cabbage and 2 to 3 shrimp. Top with a few cilantro leaves and a drizzle of sour cream. Serve with lime wedges for squeezing.
