Combine 1/2 cup each flour and cornmeal, 1 tablespoon sugar, 1 teaspoon baking powder and 3/4 teaspoon salt. Stir in 1/2 cup each buttermilk, sliced pickled okra, shredded smoked cheddar and corn kernels, 3 sliced scallions and 1 lightly beaten egg. Deep-fry heaping tablespoons in 350 degrees F vegetable oil, turning, until golden, 5 minutes. Drain on a paper towel-lined plate; season with salt. Serve with honey mustard.
