Directions
Melt the butter with the olive oil in a large Dutch oven or pot over medium-high heat. Add the red onion and cook, stirring often, until softened, about 5 minutes. Add the port and simmer until syrupy, 1 to 2 minutes. Add the cabbage, cranberries, apple, 1/2 cup water, the sugar, vinegar, star anise, cinnamon, clove, 2 teaspoons salt and a few grinds of pepper; stir to combine.
Cover the pot and reduce the heat to a simmer. Cook, stirring occasionally, until the cabbage is tender, about 30 minutes. If there is excess liquid, continue simmering, uncovered, until reduced but still juicy, about 5 minutes. Season with salt and pepper to taste. Transfer to a serving dish, removing the whole spices, and top with the parsley.
