Tofu Schnitzel with Cabbage-Apple Slaw

This high-protein vegetarian dinner gives tofu cutlets a delicious schnitzel treatment. Slabs of tofu are brined in pickle juice for extra flavor, then breaded in seasoned breadcrumbs and pan-fried until golden-brown and irresistibly crispy. Using tofu labeled “super-firm” or “high-protein” lets you skip the step of pressing the tofu to remove excess moisture, an excellent timesaver. A tangy red cabbage slaw is a classic complement to schnitzel, and a yogurt sauce with horseradish and dill rounds out this healthy meal that has 23 grams of protein per serving.

  1. For the tofu: With your knife parallel to the cutting board, slice the tofu horizontally into thin planks, each 1/3- to 1/2-inch thick; you should have at least 4 planks. Lay the slices out in a single layer in a baking dish and cover with the pickle juice; marinate for at least 20 minutes.
  2. Meanwhile, for the slaw: Combine the cabbage, apple, sunflower seeds, sunflower oil, vinegar, 3/4 teaspoon salt and a few grinds pepper in a large bowl. Toss and add more salt and pepper if needed; refrigerate.
  3. For the sauce: Stir together the grated apple, yogurt, dill, mayonnaise, horseradish, Dijon mustard, 1/4 teaspoon salt and a few grinds pepper in a medium bowl; refrigerate.
  4. For frying: Remove the tofu cutlets from the pickle juice and pat dry with paper towels. Season on both sides with salt and pepper. Set up a breading station with the flour, beaten eggs and breadcrumbs in 3 separate wide bowls. Dredge the tofu in the flour first, patting off any excess, then coat with egg, letting excess drip back in the bowl. Finally dredge into the breadcrumbs to coat completely.
  5. Heat a large skillet with 1/4-inch layer of oil over medium heat. When hot, fry the breaded tofu planks (in batches if needed) until crispy and golden brown, 1 1/2 to 2 minutes per side. Drain on a paper towel-lined plate and sprinkle lightly with salt. Divide the tofu schnitzel, cabbage slaw and sauce among 4 plates. Serve with lemon wedges and garnish with dill sprigs.
