While the simplicity of a rustic summer tomato sandwich is always a welcome treat, sometimes the occasion calls for something a bit more elegant. Perfect for snack or mealtime, these smoked salmon and tomato sandwiches would also be perfectly at home on a tower of treats for teatime.

Directions
Mix together 2 ounces softened cream cheese, 1 1/2 tablespoons chopped chives, 1 tablespoon crème fraîche, 1 teaspoon grated lemon zest and 1/4 teaspoon each kosher salt and pepper until smooth. Spread on 2 slices pumpernickel bread. Top 1 piece of bread with thin tomato slices and season with salt and pepper. Top with 1 1/2 ounces smoked salmon and the other bread slice.
