This 5-ingredient side combines nutty, toasty rice with the bright fresh flavor of orange in multiple ways. The rice is cooked in orange juice resulting in a sweet and savory flavor. It’s then tossed with some more fresh juice and orange slices for a side dish that will brighten any hearty meal.

Directions
Bring 2 1/2 cups water and the orange juice to a boil. Add the rice, olive oil and 1 teaspoon kosher salt and simmer, covered, until the rice is tender, 20 to 25 minutes. Let cool slightly, then stir in the mint and pistachios. Slice the peel off the remaining 2 oranges and cut out the segments; add to the rice and squeeze in the juice from the membranes. Toss and season with salt.
