Tomatoes get a lot of love in the summer, and rightly so, but it’s hard to ignore the abundance of zucchini — so why not celebrate its bounty as well? Letting salted raw zucchini cubes sit for a few minutes before assembling pulls out some of the excess water so they're crisp against soft fresh mozzarella.

Directions
Cut 2 medium zucchini into 3/4-inch chunks. Sprinkle with salt, let sit 5 to 10 minutes, then pat dry. Season with pepper and thread onto skewers, alternating with pearl-size mozzarella balls and small basil leaves. Drizzle with balsamic glaze; season with salt.
