Fred's Texas Bolo Burger

Special equipment:
a deep-fry thermometer or deep-fryer
  1. Heat the oil in a large Dutch oven or deep-fryer to 350 degrees F.
  2. Separate the onions into rings. Combine the flour, salt and pepper in a large bowl, then dredge the onion rings in the mixture. Dip the coated onions in water, then dredge in the flour mixture a second time. Lower directly into the hot oil (see Cook’s Note). Cook until golden brown and crispy, then keep warm and set aside.
  3. Form the beef into 6 half-pound patties, then sprinkle both sides with salt and pepper. Heat 2 large, thick-bottomed skillets to 375 degrees F.
  4. In one skillet, sear 3 patties 3 minutes on each side, adding 2 slices cheese to each in the last 2 minutes. In the other skillet sear 3 slices of bologna sprinkled with half the chili seasoning until the edges are crispy, then brush with half the barbecue sauce. Cook on both sides to caramelize the sauce. Repeat this step for the remaining patties and bologna slices.
  5. Spread 1 tablespoon mustard on each bun bottom, then spread 1 tablespoon mayo on each bun top. Place a patty on each bun bottom, then stack on crispy onion rings, then bologna. Cap with the bun tops.

Cook’s Note

Fry small batches of the onions in order to keep the oil temperature up and ensure crispy rings.
