Celebrate love with this stunning pink cocktail, infused with the vibrant hue of blood orange juice. The delicate foam, fragrant orange blossom water, and a splash of club soda make it a refreshingly romantic drink perfect for Cupid’s holiday. Garnished with crushed raspberries, it’s as beautiful as it is delicious—an ideal toast to Valentine's Day.

  1. Chill a narrow highball glass until very cold, about 5 minutes.
  2. Combine the egg white and 1 ice cube in a cocktail shaker and dry-shake until frothy, about 1 minute. Add the gin, lemon juice, simple syrup, heavy cream and orange blossom water and shake to emulsify the ingredients and create a foam, about 1 minute. Fill the shaker with ice and continue to shake until the shaker is frosted over, about 2 minutes.
  3. Pour the blood orange juice into the chilled glass, then strain the cocktail into the glass while simultaneously pouring in the club soda. Let the drink settle for a moment, then dust the top with the freeze-dried raspberries. Grate the chocolate over the top with a rasp grater.
