Directions
Chill a narrow highball glass until very cold, about 5 minutes.
Combine the egg white and 1 ice cube in a cocktail shaker and dry-shake until frothy, about 1 minute. Add the gin, lemon juice, simple syrup, heavy cream and orange blossom water and shake to emulsify the ingredients and create a foam, about 1 minute. Fill the shaker with ice and continue to shake until the shaker is frosted over, about 2 minutes.
Pour the blood orange juice into the chilled glass, then strain the cocktail into the glass while simultaneously pouring in the club soda. Let the drink settle for a moment, then dust the top with the freeze-dried raspberries. Grate the chocolate over the top with a rasp grater.
