This green shakshuka-inspired dish is fantastic to make when cleaning out odds and ends in your fridge at the end of the week. It’s customizable according to what you have on hand and can easily pass for a delicious and satisfying breakfast, brunch or dinner.

Directions
For the cilantro pesto: To a food processor, add the pistachios, cilantro, parsley and garlic. Pulse until broken down. Add the lemon zest and 1/2 cup olive oil to start. Pulse until everything is just incorporated. Season with salt and pepper, then add more olive oil to reach the desired consistency. Taste for seasoning.
For the shakshuka: Heat 2 tablespoons olive oil in a 12-inch nonstick skillet until it’s shimmering. Add the onions and cook for 5 minutes. Add the remaining tablespoon olive oil, along with the jalapeño and zucchini and cook for 5 minutes more. Season with salt and pepper.
Add the garlic, cumin and coriander and cook for 1 minute more. Add the Swiss chard, then season with salt and pepper and cook until just wilted.
Crack the eggs, spacing out evenly, over the surface of the vegetables. Cover the skillet and cook until the whites of the eggs are just set and the yolk is still runny, 5 to 8 minutes. Sprinkle each with a bit of salt and pepper.
Top with the feta, some pesto, some fresh cilantro and a squeeze of lemon and serve with grilled bread of your choice.
