These are pure fun! All of the flavors of pizza, deep-fried and served with ranch. Have these for a party that no one will forget.

  1. For the jalapeño ranch: In a small bowl, add the mayonnaise, buttermilk, chives, parsley, salt, garlic powder, black pepper and jalapeño. Stir to combine. Allow the ranch to marinate in the fridge for the flavors to further develop.
  2. For the fried pizza rolls: In a large Dutch oven, add 2 inches oil and heat over medium-high heat until 350 degrees F on a fry thermometer. Place a wire baking rack inside of a baking sheet.
  3. Using a fine mesh sieve, strain the marinara sauce of any excess liquid until it becomes a thicker consistency. Reserve and set aside.
  4. Cut the mozzarella into 20 rectangles, 1/4-by-1-by-1 1/2-inches.
  5. On one half of a wonton wrapper, dollop 1/2 teaspoon marinara sauce. Top with 1 piece of mozzarella, 3 to 4 pepperoni halves and a pinch of Italian seasoning. Be sure to not spread the marinara sauce; you don’t want it near the edge of the wonton wrapper.
  6. Brush the edges with the beaten egg. Fold one side over the other (like a book) and press to seal with your fingers. Use the prongs of a fork to lightly crimp the edges.
  7. Repeat with the remaining filling and wonton wrappers. Fry until golden brown, 3 to 4 minutes. Remove using a slotted spoon to the prepared baking sheet and season with salt.
  8. Pile on a platter and garnish with grated Parmesan and Italian seasoning. Serve with the jalapeño ranch.
