Brown Butter Crispy Rice Treats

I was the bake sale chair at my daughter's nursery school and I made these brown butter crispy rice treats. They were a total hit! We all know the classic version of these treats, but the simple act of browning the butter first gives a new depth of flavor, and the addition of crushed butter crackers adds a salty element that plays off the sweetness of the marshmallows. For the sale, I decorated with a sprinkle of edible gold glitter, but they're certainly gilded enough on their own!

  1. Grease a 9-by-13-inch baking dish with butter and line with parchment paper. Set aside.
  2. Heat a large pot or Dutch oven over medium-low heat. Add the butter and allow to cook until melted, a deep golden brown, and nutty in smell, 6 to 8 minutes.
  3. Add the marshmallows and constantly stir until they are almost completely smooth and melted, 2 to 3 minutes (it’s okay if there are some that haven’t fully dissolved). Reduce the heat to low and add the vanilla extract, cereal and butter crackers and stir to evenly coat.
  4. Immediately press into the prepared baking dish. I like to lightly grease the back of a measuring cup to evenly smooth the top of the treats. Sprinkle with flaky sea salt and let cool for at least 30 minutes to set before slicing and serving.
  5. Store the treats individually wrapped in plastic wrap to prevent them from becoming hard and dried out.
