Khao Yum (Southern Thai Rice Salad with Butterfly Pea Flower)

Khao yum is a beloved Southern Thai rice salad that’s vibrant, refreshing and packed with herbs and aromatics. My version incorporates the stunning blue of butterfly pea flower rice to bring a modern touch to this traditional dish. It’s an explosion of textures and flavors with savory, tangy and slightly spicy notes making every bite exciting. Budu dressing is a common Thai staple that’s full of umami flavor. You can find budu in Asian and specialty markets as well as online; if it’s unavailable a combination of fish sauce and shrimp paste will provide a similar flavor.

  1. For the rice: Make the blue liquid by combining the dried butterfly pea flower with off-the-boil water and steep for about 15 minutes. Squeeze out as much color as possible by hand from the pea flower, then strain the liquid and discard the pea flower.
  2. Rinse and drain the jasmine rice well and transfer it to a medium-size pot. Pour in the blue liquid. Cover the pot with a lid slightly ajar. Place over high heat and bring to a boil. Lower the heat to medium low. Let the rice steam until all the water has evaporated, 10 to 15 minutes. The blue rice should be fluffy and ready to serve. (Alternatively, make the rice in a rice cooker.) Let the rice cool down before making the salad so that the vegetables remain fresh and crisp.
  3. Make the budu dressing: In a saucepan, combine the shallot, lemongrass, galangal, water, budu, shrimp paste if using, palm sugar and lime leaves. Bring all the ingredients to a boil. Once it boils, lower the heat and simmer for about 15 minutes or until the dressing thickens. Strain out the solids, then store the dressing in an airtight container before serving.
  4. To assemble the salad: Add the rice to the center of a serving bowl and surround with piles of the lime leaves, lemongrass, coconut, shrimp floss, bean sprouts, edible flowers, chile powder and minced lime.
  5. For the vegetables and fruits: Arrange the cucumber, cabbage, pomelo and pomegranate seeds around the bowl.
  6. Drizzle the bowl with budu dressing; the dressing has a strong flavor so start with about a tablespoon and taste it before adding more. Gently toss until the ingredients are well combined. Serve immediately, either as a side dish or a light main course.

There’s no right or wrong when it comes to your choice of fruits and vegetables — think of it as creating your own rainbow. You can change the color of the rice to purple by squeezing lime juice onto the blue rice.
