Mushroom Mayonnaise

1/2 cup dried Chinese black mushrooms

1 tablespoon chopped parsley

2 tablespoons lemon juice

1 1/2 cups prepared mayonnaise

Salt and pepper


  1. Soak mushrooms in enough boiling water to cover them for about 20 minutes or until they have rehydrated. Squeeze out excess water and chop mushrooms fine. Fold mushrooms into mayonnaise until they are well blended. Season with salt and pepper to taste. Serve with grilled vegetables.
