Fried Chicken Corn Dogs

You can start preparing your chicken tenders the night before you plan to serve. To begin, combine buttermilk, hot sauce and a pinch of salt in a large mixing bowl. Add the chicken tenders and toss to coat, then cover with plastic wrap and refrigerate for at least 2 hours, or overnight.

Prepare the Corn Dog Batter

Using your blender, create a puree using fresh corn kernels, the milk from the cob, honey and buttermilk. Once the corn mixture is completely smooth, add your dry ingredients: flour, cornmeal and baking powder. Blend until the mixture is mostly smooth (a few lumps is fine).

Skewer, Dredge and Submerge

Before dipping your prepared chicken tenders in the corn dog batter, skewer and dredge them in flour that's been seasoned lightly with salt. Then, carefully dip the tenders into the batter (still in the blender), submerging completely.

Begin Frying

Carefully lower the battered chicken into the oil and fry until cooked through and golden brown (don't fry more than 3 tenders at a time or else they will stick to each other!). Once cooled, serve the corn dogs with your favorite condiment. Hot sauce, ketchup and honey mustard pair nicely with this hand-held snack.
