Pancake Batter

10 cups all-purpose flour 

1/2 cup sugar 

3 tablespoons baking powder 

3 tablespoons baking soda

1 teaspoon kosher salt 

12 cups buttermilk 

7 eggs 

3/4 cup olive oil 


  1. Combine the flour, sugar, baking powder, baking soda and kosher salt in a mixing bowl. In another mixing bowl whisk together the buttermilk and eggs. Combine the two mixtures and whisk until smooth, some small lumps are acceptable. Then whisk in the olive oil.
  2. Keep refrigerated until ready for use.
