Passionfruit and Pineapple Cocktail

Special equipment:
a high-powered blender
  1. Hollow out the bottom half of the pineapple, keeping it intact to use as the cocktail glass. Add the pineapple flesh (including the core) to the base of a high-powered blender. (Reserve the top half of the pineapple for another use.) Add the whiskey and passionfruit puree to the blender and blend until thoroughly combined. Strain through a fine mesh strainer into a small pitcher or something with a spout. Add ice to the pineapple "glass" and pour in the cocktail. Garnish with the amaro cherry.
